Pouring wine like a sommelier

A few simple habits turn every table into a celebration.

How much in the glass?

Fill a wine glass to a third, up to the widest point of the bowl. That gives the wine room to breathe. A 75 cl bottle pours six glasses.

In which order?

Light before heavy, dry before sweet, white before red, young before old. Bubbles with the aperitif, a sweet wine with dessert.

How to pour?

Hold the bottle at the base or the middle, pour calmly and give the bottle a slight twist at the end so no drops are spilled. Pour sparkling wine in two goes so the foam does not overflow.

Who first?

The host tastes a little first to check the wine is sound. Then he serves the guests and fills his own glass last.
